Creamy pasta with chicken, sun-dried tomatoes, spinach and parmesan. A simple, quick and really satisfying dinner that tastes way more elaborate than it actually is.

Ingredients
Pasta and sauce
- 250-300 g rolled pappardelle-style ribbon pasta
- 500 g chicken breast
- 1 small onion
- 2 garlic cloves
- 10 sun-dried tomatoes in oil
- 2-3 tbsp oil from the sun-dried tomato jar
- 100 ml water
- 400 ml 30% cream
- about 150 g fresh spinach
- 50 g parmesan or grana padano
- salt and pepper to taste
For the chicken
- 1 tsp salt
- 1/2 tsp pepper
To serve
- extra parmesan or grana padano
- chopped parsley
Instructions

Cut the chicken breast into cubes. Season with 1 tsp salt and 1/2 tsp pepper, then mix thoroughly.

Finely dice the onion, chop the garlic, and cut the sun-dried tomatoes into smaller pieces.

Pour the oil from the sun-dried tomato jar into a large pan and heat it well. Add the chicken and fry until the pieces are lightly browned.

Add the onion, garlic and sun-dried tomatoes to the chicken. Fry for 2-3 minutes, until the onion softens slightly and the garlic becomes fragrant.

Pour in 100 ml water and 400 ml cream. Stir and cook over medium heat until the sauce starts to thicken.

Meanwhile, cook the pasta al dente in salted water. You can drop the ribbons in whole or crush some of them into smaller pieces.

Add the fresh spinach to the thickened sauce and stir until it wilts.

Add 50 g grated parmesan or grana padano and stir the sauce until combined. Season with salt and pepper if needed.

Transfer the cooked pasta straight into the pan with the sauce. Mix thoroughly so the sauce coats the pasta. If the sauce is too thick, add a few spoonfuls of the pasta cooking water.

Serve right away with extra parmesan and chopped parsley.
Tip
Oil from the sun-dried tomato jar gives the sauce far more flavor than plain oil. It's best to cook the pasta al dente, since it finishes cooking a little more once it's mixed with the hot sauce in the pan. If the sauce gets too thick, add a few spoonfuls of the pasta cooking water. Parmesan can be swapped for grana padano.
