
Creamy Chicken Pasta with Sun-Dried Tomatoes and Spinach
Creamy pasta with chicken, sun-dried tomatoes, spinach, and parmesan. A simple, quick dinner that tastes way more impressive than the effort it takes.

Ingredients
Pasta and sauce
- 250-300 g (9-10 oz) pasta ribbons
- 500 g (1 lb) chicken breast
- 1 small onion
- 2 garlic cloves
- 10 sun-dried tomatoes in oil
- 2-3 tbsp oil from the sun-dried tomato jar
- 100 ml (1/3 cup) water
- 400 ml (1 2/3 cups) 30% heavy cream
- about 150 g (5 oz) fresh spinach
- 50 g (1/2 cup) parmesan or grana padano
- salt and pepper to taste
For the chicken
- 1 tsp salt
- 1/2 tsp pepper
To serve
- extra parmesan or grana padano
- chopped parsley
Instructions

Cut the chicken breast into cubes. Season with 1 tsp salt and 1/2 tsp pepper, then mix well.

Finely dice the onion, mince the garlic, and cut the sun-dried tomatoes into smaller pieces.

Heat the oil from the sun-dried tomato jar in a large pan. Add the chicken and cook until lightly browned.

Add the onion, garlic, and sun-dried tomatoes to the chicken. Cook for 2-3 minutes until the onion softens and the garlic becomes fragrant.

Pour in 100 ml water and 400 ml cream. Stir and simmer over medium heat until the sauce starts to thicken.

Meanwhile, cook the pasta al dente in salted water. You can leave the ribbons whole or break some into smaller pieces.

Add the fresh spinach to the thickened sauce and stir until wilted.

Add 50 g grated parmesan or grana padano and stir until combined. Season with salt and pepper if needed.

Transfer the cooked pasta straight into the pan with the sauce. Toss well to coat. If the sauce is too thick, add a few spoonfuls of pasta water.

Serve right away with extra parmesan and chopped parsley.
Tip
The oil from the sun-dried tomato jar gives the sauce way more flavor than plain oil. It's best to cook the pasta al dente, since it finishes cooking a bit more once combined with the hot sauce in the pan. If the sauce gets too thick, add a few spoonfuls of the pasta cooking water. You can swap parmesan for grana padano.
