
Homemade Kefir Bread
This homemade kefir bread is a recipe for everyone, even if you're just starting out baking bread at home. Soft inside, with a nice crust and no complicated steps.

Dough
- 750 gspelt flour type 650
- 400 gkefir
- 100 gwater
- 6 gfresh yeast (or 2 g dry yeast)
- 15 gsalt
- 2 łyżkiolive oil (optional)

Instructions

Warm the kefir slightly, only to lukewarm. It shouldn't be hot.

Pour the kefir and water into a bowl, add the yeast and stir.

Add the spelt flour, salt, and optionally the olive oil.

Knead for a few minutes, just until combined and the dough is smooth.

Cover the bowl and let the dough rise. It should take about 2 hours, but with warmer kefir it may rise faster.

Transfer the risen dough into a pot or a dish with a lid.

Put it in a cold oven and set it to 230°C, top and bottom heat.

Bake for 55 minutes from the moment the oven reaches temperature.

After baking, remove the bread from the pot and set on a wire rack to cool slightly.
Tip
If you want to speed up the rise, use warmer kefir. The olive oil is optional and the bread works fine without it too.
Common mistake
Don't use hot kefir, as it can weaken the yeast and worsen the rise.
Serving suggestion
It's best to slice it after it has cooled slightly, so the center stays firmer.
