
Cheesecake with rhubarb, strawberries and streusel
A creamy bucket-cheese cheesecake with rhubarb, strawberries and a crispy buttery streusel. A simple recipe for a seasonal cake that's great with coffee and for family gatherings.

Streusel and base
- 125 gbutter
- 125 gsugar
- 250 gwheat flour
Cheese filling
- 500 gbucket-style cheesecake curd
- 150 gbutter, melted and cooled
- 120 gsugar
- 2 szt.eggs
- 40 gsugar-free vanilla pudding powder (1 packet)
Fruit
- 300 grhubarb
- 200 gstrawberries
- 1 łyżkabrown sugar (optional, for the rhubarb)

Preheat the oven to 180°C, top-bottom heat. Line the bottom of a 24 cm springform pan with baking paper and grease the sides with butter.

Combine the butter, sugar and flour. Rub the ingredients together with your fingers or a mixer until you get a streusel.

Pour about 2/3 of the streusel into the pan and press it down to form a base and a rim about 3 cm high.

Cut the rhubarb into pieces about 1 cm long. Dice the strawberries. Optionally mix the rhubarb with 1 tbsp brown sugar and let it sit for a few minutes.

Transfer the bucket-style cheesecake curd into a bowl. Add the eggs, sugar, vanilla pudding powder and the melted, cooled butter.

Mix with a whisk or a mixer on low speed until you get a smooth, lump-free batter.

Transfer the cheese filling into the pan and level the surface.

Spread the rhubarb and strawberries evenly on top.

Sprinkle with the remaining streusel.

Bake for about 60 minutes at 180°C, top-bottom heat.

Once baked, let the cheesecake cool completely, and dust with powdered sugar before serving.
Tip
If the rhubarb is very tart, mix it beforehand with a bit of brown sugar.
Common mistake
Overmixing the cheese filling can whip too much air into the cheesecake and cause it to crack while baking.
Serving suggestion
Serve well chilled, dusted with powdered sugar. It's fantastic with a cup of coffee.
