
Banoffee Tatin with Caramelized Bananas
A simple one-pan dessert that combines crispy puff pastry, caramelized bananas, and a toffee sauce. Banoffee Tatin is best served with whipped cream and grated chocolate.

- 100 gfine sugar
- 60 gcold butter
- 2 łyżki30% or 36% cream
- 1 łyżeczkavanilla extract
- 1 szczyptasalt
- 3 szt.bananas (ripe but firm)
- 1 arkuszpuff pastry
- whipped cream (for serving)
- grated chocolate (for serving)

Instructions

Pour the sugar into a cold pan and gently shake it so the sugar forms an even layer. Heat over low heat without stirring until the sugar melts and turns into a golden caramel.

Add the cold butter, cut into cubes, and whisk vigorously until it combines with the caramel.

Pour in the cream and mix vigorously. Be careful, as the caramel will bubble up strongly. Add the vanilla extract and a pinch of salt.

Peel the bananas and cut them in half lengthwise. Place them cut-side down in the pan and cook in the caramel for about 2 minutes.

Cover the bananas with a sheet of puff pastry. Gently tuck the edges of the pastry into the pan. Prick the pastry with a fork in several places and make a small hole in the center so steam can escape freely.

Place the pan in an oven preheated to 190°C and bake for about 30 minutes, until the puff pastry is risen and golden.

After removing it from the oven, let the tart rest for 5–10 minutes. Gently loosen the edges from the pan, place a large plate on top, and flip the tart over in one confident motion. Don't wait for the dessert to cool completely, as the caramel may stick to the pan.

Serve the Banoffee Tatin warm with whipped cream and grated chocolate.
Tip
Use a pan that can be safely placed in the oven for this dessert. The bananas should be ripe but still firm, so they don't fall apart during baking.
Common mistake
If the caramel hardens before you flip the tart, warm the pan over low heat for 20–30 seconds.
Serving suggestion
Serve warm with whipped cream and grated chocolate.
