
Łazanki with sauerkraut, sausage and mushrooms
Homemade łazanki with sauerkraut, sausage, bacon and mushrooms. A simple, cheap and filling pasta dinner that tastes even better the next day.

Łazanki
- 400 gsauerkraut
- 500 mlwater
- 3 szt.bay leaves
- 5 szt.allspice berries (a few)
- 350 gsmoked sausage (you can use 300-350 g)
- 150 gsmoked bacon
- 1 szt.onion (large)
- 6 szt.button mushrooms
- 250 gcooked łazanki pasta squares (you can use 200-250 g)
- 1 łyżeczkasmoked paprika
- 1 łyżeczkamarjoram
- ½ łyżeczkipepper
- 1 łyżeczkacaraway seeds (optional)
- 1 łyżeczkatomato paste (optional)

Instructions

Transfer the sauerkraut into a pot, add water, bay leaves and allspice. Cook for about 40 minutes, until the sauerkraut softens.

Drain the cooked sauerkraut. If the strands are very long, you can chop it up a bit.

Cut the bacon into cubes, the sausage into half-moons, chop the onion, and slice the mushrooms.

Render the bacon in a large pan or wide pot. Add the sausage and fry for a few minutes, until lightly browned.

Add the onion and mushrooms. Fry until the onion softens and the mushrooms release and cook off their extra moisture.

Add the cooked sauerkraut, smoked paprika, marjoram and pepper. If you like, add caraway seeds or tomato paste too.

Add the cooked łazanki pasta squares and mix everything thoroughly.

Fry everything together for another 2-3 minutes so the flavors meld. Taste at the end and only then decide whether it needs salt.
Tip
Don't add salt right away. Sauerkraut, smoked bacon and sausage often bring plenty of saltiness on their own. It's best to taste the łazanki at the end and season only if it really needs it.
Common mistake
The most common mistake is salting the dish too early. With smoked meat and sauerkraut, it's very easy to oversalt the łazanki.
Serving suggestion
Serve right away, but keep in mind that łazanki with sauerkraut and sausage also tastes great reheated the next day.
