Instructions
- 1
Marinate the chicken in soy sauce, ginger, and pepper for 30 minutes.
- 2
In a separate bowl, mix together all the sauce ingredients.
- 3
Brown the chicken on both sides until golden.
- 4
Pour in 125 ml of stock or water and simmer covered for about 30 minutes, until the meat is cooked through.
- 5
If using breast or boned thighs, simmer for a shorter time.
- 6
Add half a package of the Chinese vegetable mix and cook for about 5 minutes.
- 7
Pour in the prepared sauce and cook for another 5 minutes, until it thickens and heats through well.
- 8
Serve with rice.
Tip
If you make this with chicken breast, watch the simmering time so the meat stays juicy.
Common mistake
Cooking the breast too long will make it dry and stringy.
Serving suggestion
Tastes best right after cooking, with hot rice.
