
Pork Neck Under a Mushroom and Cheese Blanket

- 500 gpork neck (sliced)

- 1 czubata łyżeczkasmoked paprika
- ½ łyżeczkipepper
- 1 łyżeczkasweet paprika (optional)
Sauce for the meat
- 4 łyżkimayonnaise
- 1 łyżkamustard
Mushroom blanket
- 500 gmushrooms (sliced or grated)
- 1 sztukaonion (large, cut into wedges)
- salt (pinch)
- pepper (pinch)
- 20 gbutter
- 200 gmozzarella or gouda cheese (grated)

Instructions

Slice the pork neck and rub with salt, granulated garlic, smoked paprika, pepper, and optionally sweet paprika.

Slice the mushrooms or grate them.

Put the mushrooms into a dry pan and cook until the liquid evaporates.

Cut the onion into wedges and add to the mushrooms.

Season the mushrooms and onion with a pinch of salt and pepper, add the butter, and sauté for about 5 minutes, until the onion turns translucent.

Arrange the meat on the bottom of a baking dish or tray.

Mix the mayo with the mustard and spread this mixture over the pork neck.

Spread the sautéed mushrooms and onion over the meat.

Cover the dish with aluminum foil and bake at 190°C for 60-70 minutes, until the meat is tender.

After that, remove the foil and sprinkle everything with the cheese and oregano.

Put it back in the oven and bake for another 20 minutes or so, until the cheese melts and lightly browns.

Serve right away, ideally with potatoes, fries, groats, or bread.
Tip
The mayo and mustard mixture makes the sauce here and helps keep the pork neck juicy. Don't skip this step, since it makes a big difference.
Common mistake
Don't put raw mushrooms straight onto the meat. Cook off their liquid in a pan first, or they'll release a lot of water while baking.
Serving suggestion
Pork neck under a blanket goes great with potatoes, fries, groats, or fresh bread to soak up the sauce from the dish.
