
Homemade Kebab with Soft Buns
Buns as soft as from a Turkish bakery and juicy chicken. Homemade kebab that tastes better than from many takeaway stands.

Buns
- 500 gwheat flour type 550
- 320 glukewarm water (for beginners, I recommend 280 g)
- 15 gfresh yeast
- 10 gsalt
- 10 gsugar
- 25 golive oil
- 40 gGreek yogurt
- olive oil (for drizzling)
- sesame seeds
- nigella seeds
Meat
- 500 gboneless chicken thighs
- 1 łyżkaolive oil
- 1-2 łyżkikebab seasoning
- 1 szt.large onion
Toppings
- lettuce
- tomato
- red onion
- cucumber
- your favorite kebab sauce
Instructions

Add the yeast and sugar to the lukewarm water. Then add the flour, salt, olive oil, and Greek yogurt. Knead the dough for about 10 minutes, until smooth and elastic.

Cover the bowl and let the dough rise for about 60 minutes, or until doubled in volume.

Mix the chicken thighs with olive oil and kebab seasoning. Place half an onion, flat side down, on a baking tray, skewer it with a skewer stick, and thread the meat onto it. Set aside to marinate while the dough rises.

Divide the risen dough into 6 equal parts and shape into balls. Let rest for 15 minutes.

Drizzle each ball with olive oil and gently flatten with your fingers, creating characteristic dimples. Sprinkle with sesame and nigella seeds. Let rise for about 30 minutes.

Bake in an oven preheated to 220°C (top and bottom heat) for 13–16 minutes. After baking, cover with a kitchen towel for 10 minutes.

Roast the meat at 180°C with fan/convection for about 50 minutes, until it reaches an internal temperature of 76°C. Then slice thinly.

Cut the buns open, add your favorite vegetables, sauce, and meat. Serve immediately.
Tip
If you're just starting out with baking, use 280 g of water instead of 320 g — the dough will be easier to shape. Chicken thighs stay juicier than breast, so they work better in this recipe.
Common mistake
Don't add extra flour while kneading. The dough should stay soft and slightly sticky — adding too much flour will make the buns dense.
Serving suggestion
After baking, cover the buns with a kitchen towel for 10 minutes so the crust stays soft. Serve right away, filled with your favorite toppings and sauce.
