
Homemade nuggets like from McDonald's
Crispy homemade chicken nuggets inspired by the ones from McDonald's. The secret is grinding the meat in a food processor, which keeps the inside juicy and tender while the coating turns out especially crispy.

Meat
- 700 gChicken breast
- 10 gSalt (about 2 level tsp)
- ¾ łyżeczkiWhite pepper
- 25 gPotato starch
Coating batter
- 195 gWheat flour
- 47 gPotato starch
- 1½ łyżeczkiSweet paprika
- ½ łyżeczkiSalt
- ¾ łyżeczkiGranulated garlic
- ⅓ łyżeczkiWhite pepper
- 530 mlSparkling water (very cold)
Also needed
- 100 gPotato starch for coating (as needed)
- Oil for frying

Instructions

Cut the chicken breast into smaller pieces and transfer to a food processor.

Add the salt, white pepper and potato starch. Process into a smooth, sticky mass.

Using two spoons or slightly wet hands, shape small nuggets.

Coat each nugget thoroughly in potato starch.

Place the nuggets on a plate or tray and put them in the freezer for about 30 minutes.

In a bowl, mix the flour, potato starch, sweet paprika, salt, granulated garlic and white pepper.

Pour in the very cold sparkling water and mix just until combined.

Heat the oil to about 175°C.

Dip the frozen nuggets in the batter and drop them straight into the hot oil.

Fry for 4-5 minutes, until the coating is golden and crispy.

Transfer to a paper towel or a rack and serve right after frying.
Tip
Very cold sparkling water makes the coating turn out crispier. Best served with barbecue, sweet and sour, or garlic sauce.
Common mistake
Overmixing the coating batter or using warm water will make the coating less crispy.
Serving suggestion
Serve with fries, coleslaw or your favorite sauces, just like at a fast food restaurant.
