
Potato and Cauliflower Soup with Sausage

Soup
- 500 gcauliflower (cut into florets)
- 500 gpotatoes (diced)
- 700 mlwater or stock (or water plus a stock cube)
- 200 g18% cream
- 1 łyżeczkasalt
- ½ łyżeczkipepper
- ¼ łyżeczkinutmeg
- 20 gbutter
- 1 sztukaonion (diced)
- 250 gsausage (diced)
Instructions

Melt the butter in a pot. Add the diced onion and sauté for about 3 minutes, until translucent.

Add the diced potatoes and the cauliflower florets.

Pour in the water or stock, add salt, and cook for 20-25 minutes, until the potatoes are tender.

Meanwhile, fry the sausage in a pan until golden.

Add the fried sausage, pepper, and nutmeg to the soup.

Add the cream, stir, and cook for another 2-3 minutes.

Taste and adjust seasoning if needed. Serve hot.
Tip
Frying the sausage before adding it to the soup really boosts the flavor and aroma.
Common mistake
Adding cream to very hot soup without tempering it can cause it to curdle. Mix the cream with a few spoonfuls of soup first, then add it to the pot.
Serving suggestion
Serve with fresh bread or croutons. You can top it with chopped chives.
