- 400 gpork tenderloin
- ½ łyżeczkisalt
- ½ łyżeczkipepper
- 1 szczyptathyme
- fresh herbs (oregano or marjoram)
- 2 ząbkigarlic
Creamy mushroom sauce
- 1 mała sztukaonion
- 6 sztukbutton mushrooms
- 200 ml30% cream
- 100 gmascarpone
- 1 łyżkabutter
- olive oil or vegetable oil (for frying)

Instructions

Trim the white silverskin from the pork tenderloin. You don't need to be perfect about it, just remove the larger pieces.

Rub the meat with salt, pepper, thyme, fresh herbs and garlic pressed through a garlic press.

Let the tenderloin marinate for at least an hour or two. If you're short on time, you can cook it right away.

Heat the butter together with a bit of olive oil or vegetable oil in a large pan.

Sear the tenderloin on all sides for about 3-4 minutes, just until lightly browned. Don't fry it too long.

Transfer the meat to a plate and set it aside for a moment.

In the same pan, fry the finely chopped onion.

Add the sliced mushrooms and fry everything together for about 4 minutes.

Pour in the 30% cream and add the mascarpone.

Season the sauce with an extra pinch of salt, pepper and fresh herbs.

Simmer the sauce for a few minutes, until it starts to thicken slightly. If it gets too thick, add a splash of water.

Return the tenderloin to the sauce.

Cover the pan with a lid and simmer everything for about 8-10 minutes.

Serve the pork tenderloin in creamy mushroom sauce with pasta, rice, groats or potatoes.
Tip
The key is not to overcook the tenderloin at the start. A short sear is enough, so that after simmering it stays tender and juicy.
Common mistake
Frying the tenderloin too long before simmering will make the meat dry.
Serving suggestion
Best served with tagliatelle, mashed potatoes or rice.
