Sauerkraut Pancakes with Cheese and Sausage

Batter
- 400 gsauerkraut
- 300 gwheat flour
- 370 gmilk
- 200 gsausage
- 100 gcheese (mozzarella, gouda, or emmental)
- 2 szt.eggs
- 1 ząbekgarlic
- oil (for frying)
Seasoning
- salt (to taste)
- pepper (to taste)
- marjoram (to taste)
- ground caraway (to taste)
Instructions

Crack the eggs into a bowl, pour in the milk, and add the flour. Mix into a smooth batter.

Drain the sauerkraut, squeeze it out, chop it, and add to the bowl.

Add the diced sausage.

Season with salt, pepper, marjoram, and caraway.

Add the pressed garlic and the grated cheese.

Mix everything together.

Fry the pancakes in oil on both sides until golden.
Tip
Well-squeezed sauerkraut gives a better texture and makes the pancakes easier to fry.
Common mistake
Sauerkraut that's too wet will loosen the batter and the pancakes will be harder to flip.
Serving suggestion
Best right after frying, on their own or with a dollop of sour cream.
