Ingredients
Dough
- 220 glukewarm water
- 20 gfresh yeast
- 350 gwheat flour
- 1 łyżeczkasalt
- 60-70 gstale bread roll
Instructions
- 1
Pour 220 g of lukewarm water into a bowl.
- 2
Add the fresh yeast and mix thoroughly until dissolved.
- 3
Cut the stale bread roll into cubes, add to the yeast water, and let it soak through properly.
- 4
Add 350 g of wheat flour and 1 teaspoon of salt.
- 5
Knead everything into a smooth, uniform dough.
- 6
Cover the bowl and leave the dough to rise for about 1 hour.
- 7
Divide the risen dough into two equal parts.
- 8
Shape each part into an elongated log.
- 9
Place the dumplings in a steamer basket over boiling water.
- 10
Steam for about 25 minutes.
- 11
Once cooked, remove the dumplings and slice them. The best way to do this is with a piece of thread — it won't crush them.
Tip
The water should be lukewarm, not hot, so you don't damage the yeast. The stale bread roll is a key ingredient that gives the dumplings their characteristic texture.
Common mistake
Don't lift the lid unnecessarily while steaming — you'll let the steam escape.
Serving suggestion
These dumplings go great with pork goulash, beef goulash, and other meat sauces. Slice them with a thread so they don't get squashed.
