Dough
- 650 gspelt flour type 650
- 350 gboiled cold potatoes
- 190 gwater
- 9 gfresh yeast
- 12 gsalt
- 2 łyżeczkiolive oil
Instructions

Blend the potatoes with the water and yeast.

Add the flour, salt, and olive oil, then knead the dough.

Let the dough rest for 15 minutes, do a fold, and give it another 15 minutes to rest.

For a better version, let the dough rest for 30 minutes, do a fold, and give it another 30 minutes to rest.

Shape the bread and transfer it into a greased pot.

Put the pot into a cold oven.

Bake for 55 minutes at 230°C, uncovered for the last 10 minutes.
Tip
The better you blend the potatoes with the water, the more uniform and soft the bread's texture will be.
Common mistake
Too short a fermentation will make the bread heavier and less fluffy.
Serving suggestion
Great for sandwiches, especially while still slightly warm.
