Ingredients
Dough
- 450 gcold water
- 5 gfresh yeast (or about 1.7 g dry yeast)
- 620 gspelt flour type 630
- 30 gwhole grain spelt flour
- 15 gsalt
Instructions

Mix both flours with the salt.

Dissolve the yeast in the cold water.

Pour the water into the flour and stir with a spoon for about 2 minutes, just until the ingredients come together.

Put the dough in the fridge for 8-12 hours.

In the morning, take the dough out 20-30 minutes ahead of time.

Shape into a loaf and tighten it gently.

Transfer the dough into a greased pot or dish with a lid.

Put it in a cold oven and bake for 55 minutes at 230°C, counting from the moment the oven reaches temperature, keeping it covered the whole time.
Tip
Don't try to knead this dough for long. Just combining the ingredients thoroughly and giving it time is enough.
Common mistake
Not enough time in the fridge takes away this bread's flavor and structure.
