Starter
- 150 gwater
- 50 gwheat flour
- 10 gfresh yeast
Main dough
- 450 gwheat flour (type 450, 550, 650, or 750)
- 10 gsalt
- 10 gfresh yeast
- 180 gwater
Instructions

Prepare a starter from 150 g water, 50 g flour, and 10 g yeast. Mix and set aside briefly.

Add 450 g flour and 10 g salt to a bowl.

Dissolve the remaining 10 g yeast in 180 g water and add to the bowl together with the starter.

Knead the dough for 5-10 minutes.

Let the dough rest for 15 minutes.

Knead the dough briefly again.

Divide into 9 equal pieces and shape into rolls.

Let rise for about 20 minutes.

Score the rolls and bake for about 20 minutes at 230°C.
Tip
Well-kneaded dough and a short rest after kneading improve the structure of the rolls.
Common mistake
Kneading too briefly will make the rolls less light and give them a worse rise.

Great for everyday sandwiches, breakfasts, and dinners.
