American Chewy Cookies

Dough
- 225 gsoft butter
- 200 gdark brown sugar
- 40 gwhite sugar
- 1 szt.egg
- 1 szt.egg yolk
- 1 łyżkavanilla bean paste or vanilla extract
- 285 gwheat flour
- 1 łyżkapotato starch
- 0,5 łyżeczkibaking soda
- 0,5 łyżeczkibaking powder

- 0,5 łyżeczkiinstant espresso coffee
- 100 gdark chocolate
- 150 gchocolate chips or chunks

Instructions

Put the soft butter in a bowl and beat for about 2 minutes, until lighter and creamy.

Add the dark brown sugar and white sugar and keep beating until the mixture is fluffy.

Add the egg, egg yolk, and vanilla bean paste or vanilla extract and mix briefly to combine.

Add the wheat flour, potato starch, baking soda, baking powder, a pinch of salt, and the instant espresso coffee.

Mix only until the ingredients come together. Don't overmix, or the cookies will turn out tough.

Add the chopped dark chocolate and the chocolate chips or chunks and stir briefly.

Shape the dough into large balls, ideally about 50-60 g each.

Place the balls on a plate or tray and chill in the fridge for at least 2 hours.

Preheat the oven to 175°C, top and bottom heat.

Place the cookies on a baking tray lined with parchment paper, leaving plenty of space between them.

Bake for 16-18 minutes, until the edges are lightly golden and the center still looks soft.

After baking, leave the cookies on the tray for 10-15 minutes to set and keep their chewy center.
Tip
Don't overbake the cookies. When you take them out, the center should look slightly underdone, since they keep cooking on the hot tray.
Common mistake
The most common mistake is baking too long. Then the cookies lose their soft, chewy center and turn dry.
Serving suggestion
They taste best slightly warm, when the chocolate inside is still soft.
